KEY INNOVATION

A key innovation of MycoFlour™ is its ability to naturally enrich fermented wheat flour with Vitamin D. After fermentation, a natural biophysical treatment is applied to convert fungal metabolites into valuable Vitamin D, creating a flour ingredient that can help address the widespread Vitamin D deficiency observed across the UAE and the wider region.

MycoFlour™ uses solid-state fungal fermentation to transform wheat from a basic staple into a smarter, more nourishing ingredient. As selected edible fungi grow through the wheat, they release enzymes and natural metabolites that reshape the flour from within. Proteins become more accessible. Fiber content increases. Micronutrients are unlocked. Digestion becomes lighter and more efficient.

MycoFlour™ turns fermented wheat into a natural source of Vitamin D through photoconversion: a clean biophysical process that activates compounds already produced by fungi.

 

During fermentation, edible fungi generate ergosterol, a natural fungal molecule. When exposed to a controlled light-based treatment, ergosterol is converted into Vitamin D. In other words, the fungi create the precursor, and our process transforms it into a valuable nutrient inside the flour matrix. Vitamin D is essential for life. It helps the body absorb calcium, supports normal bone mineralization, contributes to muscle and nerve function, and plays a role in immune regulation.

Daily intake covered

Up to 15 µg of Vitamin D per 100 g serving of MycoFlour provide you with the daily intake set for healthy individuals over one year of age by EFSA, and the recommended amount for most adults listed by the NIH.

Vitamin D is built into the flour itself, allowing it to reach consumers through bread, bakery products, snacks, noodles, and other familiar foods.
